This recipe uses the following spices:

Eggplant Grill


1 small eggplant, chopped
1 small onion, diced
6 cloves garlic, sliced
2 Tbsp. The Spice Hunter Curry Seasoning or 100% Organic Curry Seasoning
1 tsp. The Spice Hunter Ground India Turmeric or 100% Organic Ground Turmeric
½ tsp. The Spice Hunter Chipotle Chile Pepper
2 strands The Spice Hunter Spanish Mancha Saffron Strands
½ tsp. salt
3 Tbsp. olive oil
1 Tbsp. balsamic vinegar


Place eggplant, onion and garlic on a large piece of foil. Mix together remaining ingredients and drizzle over vegetables. Fold foil to form a pouch. Cook pouch on a medium to high heat grill for 25 minutes.
