I love shallots. These make it easy to have them on hand and add them to everything. I like to use them on eggs over easy. I let them get a nice crunchy caramelization.. I also like to add them to the broth while preparing pasta for a mild flavor boost. Nice to use when baking or pan grilling any meats, fish or poultry. A nice addition to salad dressings too. Another of my go-to flavors. I have never seen them anywhere but Spice Hunter but then, I stopped looking elsewhere long ago. .

Without these, there would be no mushroom omelet possible in my repertoire — and the chicken liver omelet would never have been invented. (No one has ever been sorry they tried it, but it’s like pulling teeth to get that first bite into a person who hasn’t had one before!)
