Apricot-Glazed Pork Tenderloin

Apricot-Glazed Pork Tenderloin


2 pork tenderloins (about 12 ounces each) trimmed of excess fat
1 Tbsp. olive oil
The Spice Hunter Coarse Black Pepper
1 cup apricot jam
¼ cup spicy brown mustard


Heat broiler; set rack 4 inches from heat. Line a rimmed baking sheet with foil. Rub pork with oil. Season with salt and pepper. Broil 10 minutes. Meanwhile, whisk jam and mustard in small saucepan. Cook over medium heat until jam melts, then remove from heat. Reserve half of sauce for brushing. Cover remaining half with foil to keep warm for drizzling on finished pork. Remove pork from broiler. Brush with reserved sauce. Continue broiling until pork is blackened in spots and registers 150°F. Cover pork loosely with foil. Let rest 5 minutes before slicing. Serve drizzled with warm sauce.     I will try this without the salt. I am ordering your 6 pack of salt free spices. I will look forward to any and all receipes for appetizers and entries that don't require salt. I am very excited to have so many spices I can now use in my cooking. My husband is on a 2000 mg. Sodium diet and is very hard to achieve tasteful meals every day.
