Blueberry-Cranberry Arugula Salad with Cinnamon Vinaigrette


Ingredients

Cinnamon Vinaigrette:
⅓ cup cider vinegar
⅓ cup honey
1 tsp. The Spice Hunter 100% Organic Ground Cinnamon
1 tsp. The Spice Hunter Ground Yellow Mustard
½ tsp. salt
¼ cup vegetable oil

Salad:
1 (7 oz.) bag arugula
2 cups fresh blueberries
½ cup coarsely chopped pecans
½ cup crumbled feta cheese
½ cup dried cranberries

Preparation

Vinaigrette:
1. Combine all vinaigrette ingredients in a bowl, whisk to blend. Set aside.

Salad:
1. Place all salad ingredients in a large mixing bowl.

2. Drizzle ½ of the dressing on the salad and toss; serve salad with remainder of dressing on the side.
