Caldo Verde (Portuguese Green Soup)


½ cup of extra virgin olive oil

1 large onion, peeled and chopped

3 cloves garlic, minced

1 bunch collard greens, julienned

1 lb. linguica sausage, thinly sliced

2 lbs. potatoes, peeled and diced

6 ½ cups broth (chicken or vegetable)

½ tsp. The Spice Hunter Red Cayenne Pepper

Salt and The Spice Hunter Ground Black Pepper to taste

Additional extra virgin olive oil for serving


In a large pot, heat extra virgin olive oil over medium-high heat. Add onion and garlic, and sauté until soft. Add collard greens and sauté until wilted. Sauté the sausage for 5 minutes. Add the potatoes and broth, and simmer uncovered for about 20 minutes. Transfer 1 cup of the soup (without any sausage) to a blender and blend until smooth before returning to the pot and continuing to simmer. Add cayenne pepper, salt, and pepper to taste.

Serves 4-6.

    My mother used to make this but we use Kale or Watercress not collard greens..
