Cardamom Pound Cake with Orange Glaze


2 sticks butter, softened
3 cups granulated sugar
3 cups sifted flour
6 eggs
2 tsp. The Spice Hunter Pure Vanilla Extract
1½ tsp. The Spice Hunter Guatemalan Cardamom
8 oz. whipping cream
1 cup orange juice
1 cup sugar


For Cake: Cream butter and sugar with mixer. Add remaining ingredients and cream together well. Pour into a greased and floured tube or bundt pan. Bake at 275°F for one hour. Increase heat to 350°F for 15-20 minutes more. Cool for 10 minutes and remove from pan. Pierce with fork and add glaze while still warm.
For Glaze: Mix together orange juice and sugar. Boil gently until a light syrup forms (about 10 min). Cool slightly and spoon onto pound cake.

    I made this recipe years ago and WOW is it good! I was thinking about it the other day and didn't know the recipe was still available. I'm excited to make it again - it has a light cardamom flavor and the orange glaze is literally the "icing on the cake."

    Made 1 substitution: 1c vanilla yogurt + milk instead of the vanilla and whipping cream. It looked as if it hadn't cooked at all after an hour at 275° and 15 min @350°. Sloshed out of the pan onto my oven door. So I turned it to 300° and put it in for an additional 30 mins. Still not done. 15 more minutes at 350° and we'll see how it comes out.

    It turned out great! I had some fresh oranges a bit past their prime so I used them for the icing, and the orange really compliments the cardamom. I think I might zest a little over the top as a garnish next time.
