Cucumber Colada


Ingredients

1/2 cup cucumber, seeded and rough chopped

2 oz. coconut milk

2 oz. *** simple syrup

1 Tbsp The Spice Hunter Coriander Lime Global Fusion Rub

1 glass of ice

2 oz. rum

 

*** Chef’s note: For simple syrup, add 1 cup sugar and 1 cup water to saucepan and bring to a simmer (or until sugar is dissolved). Remove from heat, cool, and store refrigerated until ready to use.

Preparation

Place cucumber, coconut milk, simple syrup, and The Spice Hunter Coriander Lime Global Fusion Rub in a blender to create a mixture of the same consistency as Bloody Mary mix.

Place ice in a cocktail shaker and add the cucumber mixture, along with rum, and shake vigorously (roughly 2 minutes).

Pour into chilled glass with strainer and garnish with cucumber slice dipped in The Spice Hunter Coriander Lime Global Fusion Rub.
