Elote (Mexican Inspired Street Corn)
4 ears corn on the cob, shucked and cleaned
3 Tbsp. cotija cheese, crumbled
¼ cup cilantro, chopped
½ cup Duke’s Mayonnaise

Preheat grill to medium-high heat. Grill corn for 5-10 minutes or until caramelized, turning corn every 1-2 minutes. Remove corn from grill. To make the mayonnaise crema, combine the Duke’s Mayonnaise and 2 tsp. The Spice Hunter Coriander Lime Global Fusion Rub in a stainless steel bowl, whisking until well-combined.
