Fajitas


Ingredients

1/4 cup canola oil
2 Tbsp. fresh lime juice
2-3 Tbsp. The Spice Hunter Fajita Seasoning
1 lb. chicken or sirloin, thinly sliced, or
shrimp, peeled and deveined
1 medium red pepper, sliced
1 medium green pepper, sliced
1 small red onion, sliced
3 green onions, chopped
salt to taste
1/2 cup fresh cilantro, chopped
4 oz. feta cheese, crumbled
1 dozen corn tortillas, warmed

Preparation

In large bowl, combine oil, lime juice, and Fajita Seasoning. Add meat, peppers, and onions. Stir until thoroughly coated. Heat large skillet on high. Pour meat and vegetables into hot pan, cooking and stirring until meat is cooked throughout. Fill tortillas with meat and vegetables. Sprinkle with cilantro and cheese.

    My favorite fajita recipe for nearly 20 years! The first time i made fajitas at home was using this recipe because it was printed on the back label of the spice jar. They no longer print it on the seasoning blend jar so i was glad to find it online. I make my own spice blends for tacos, enchiladas, spaghetti and, well, everything else...but this is simply perfect as it i wont even try anything else. Oh and the first time i made it years ago, my husband and i had just started dating. His best buddy who works in the restaurant industry was visiting and told my then boyfriend they were the best fajitas he ever had. I was so pleased with myself as i was a beginner home cook at the time. Obviously i am still very pleased with the spice hunter!!!
