Italian Herb Scones


3 cups flour
2 Tbsp. sugar
1 tsp. salt
1 Tbsp. plus one tsp. baking powder
2 Tbsp. The Spice Hunter Fresh at Hand Italian Herb Blend
¼ cup Parmesan cheese, grated
1 cup mozzarella cheese, shredded
1 2/3 cups heavy cream


Preheat oven to 425°F. Mix together flour, sugar, salt, baking powder, Italian herb blend and cheeses. Add the cream and stir until dough comes together. Knead dough gently, pressing it against the side of the bowl 10-15 times. Transfer to a floured surface and pat into a slightly domed 10-inch disc. Cut into 12-16 narrow wedges or rounds; place on an ungreased baking sheet, 1-inch apart. Bake 20 minutes or until lightly browned on top. Transfer to a wire rack. Serve warm. Try with smoked salmon and fresh dill.
