1 lb. Italian turkey sausage
3 bell peppers, one each: red, green, yellow
1 medium onion, sliced
1 zucchini, sliced
1 (14.5 oz.) can diced tomatoes
¾ tsp. The Spice Hunter Coarse Ground Black Pepper or 100% Organic Coarse Ground Black Pepper
salt to taste
Cut sausage into ½ inch pieces. Sauté the sausage in a skillet over medium heat for 10 minutes or until done. Remove sausage with a slotted spoon. Drain and discard all but 1 tsp. of the oil from the pan. Remove the core and seeds from the peppers and slice. Sauté the peppers, onions, and zucchini in the skillet for 5 minutes. Add the tomatoes (with juice), black pepper, salt, and reserved sausage. Bring to a boil, reduce the heat and simmer for 5 minutes (the vegetables should be a little crisp). Serve over rice or pasta.
