Lemon Herb Chicken
1 – 3½ lbs. whole chicken
1 large onion cut into 1/8 pieces
3 Tbsp. butter
1 ¼ tsp. salt
1 large clove of garlic, minced
1½ tsp. The Spice Hunter Italian Seasoning
Clean chicken, place in a greased Dutch oven or casserole dish. Put chopped onions in cavity of chicken. Arrange potatoes around chicken. Melt butter, add salt, garlic and Italian seasoning. Brush blend over chicken. Squeeze lemon over top. Bake at 450°F 1¼ to 1½ hours, basting twice with juices.
