Mini Fig & Goat Cheese Pizzas
1 lb. prepared pizza dough
6-8 oz. dried figs, sliced thin
6 oz. goat cheese
⅓ cup honey
¼ tsp. The Spice Hunter Fine Ground Black Pepper
Divide dough into about 12 equal portions. Lightly dust with flour and stretch dough into small rounds, then place on a pizza stone or lightly greased baking sheet. Let sit at room temperature for about 15 minutes. Preheat oven to 450°F. Add black pepper to honey and stir well. Spread a teaspoon or two of the honey mixture onto each dough round. Top with figs and cheese, then bake for about 10 minutes or until crust is golden brown. Remove from oven and drizzle with remaining honey before serving. Garnish with fresh thyme if desired.
