New England Apple Nut Stuffing


½ cup butter (1 stick)
3 large celery stalks, finely chopped
1 large onion, chopped
3 medium Golden Delicious apples (1 pound), peeled, cored, and finely chopped
1½ loaves (24 oz.) sliced firm white bread, cut into¾-inch cubes and lightly toasted
1 (14½ oz.) can chicken broth
½ cup pecans, toasted and chopped
½ cup walnuts, toasted and chopped
2 Tbsp. The Spice Hunter Sesame Seeds, toasted (optional)
½ tsp. The Spice Hunter Poultry Seasoning
¼ tsp. The Spice Hunter Mediterranean Oregano Leaves, crumbled
¼ tsp. The Spice Hunter Coarse Black Pepper


Preheat oven to 325°F. In 12-inch skillet, melt butter over medium heat. Add celery and onion; stir occasionally and cook until tender, about 10 minutes. Add apples and cook 5 minutes longer. In large bowl, combine celery mixture with toasted bread cubes and remaining ingredients; toss to mix well. Spoon stuffing into greased 13 by 9 inch glass baking dish; cover with foil and bake 45 minutes, or until heated through. Makes about 12 cups. Adapted from Goodhousekeeping
