Shrimp and Chicken Curry
3 Tbsp. butter
½ yellow onion, chopped
½ red bell pepper, chopped
½ green bell pepper, chopped
2 large cloves of garlic, minced
1 ½ cups chicken or vegetable broth
2 Tbsp. The Spice Hunter Curry Seasoning or 100% Organic Curry Seasoning
¼ tsp. The Spice Hunter Red Pepper or 100% Organic Red Pepper
1 cup cooked chicken, cubed
1 cup cooked shrimp
1 cup heavy cream
Salt to taste
In a large pot, sauté onion, garlic, and bell peppers in butter and cook until soft. Add broth and bring to a boil. Stir in chicken, shrimp, curry seasoning, and organic red pepper, reduce heat and simmer 10 minutes. Stir in cream and simmer another 5-10 minutes or until desired thickness. Serve over rice. Makes 5 – 1 cup servings.
Garnish suggestions: lime wedges, fresh mint leaves and/or fresh cilantro.
