Spiced Tomato Shakshuka


1 Tbsp. canola oil
1 cup onion, chopped
1 tsp. garlic cloves, minced
½ cup red bell pepper, chopped
½ cup green bell pepper, chopped
4 cups crushed tomatoes
1½ cups chicken stock
1 tsp. The Spice Hunter Chili Powder
½ tsp. The Spice Hunter Highland Harvested Saigon Cinnamon
1 tsp. The Spice Hunter Turkish Cumin
1 tsp. The Spice Hunter Smoked Paprika
¼ tsp. The Spice Hunter Red Pepper
1 tsp. kosher salt
½ tsp. The Spice Hunter Coarse Black Pepper
1 Tbsp. parsley, fresh, chopped
4-6 large eggs


1. In a medium cast iron pan over medium heat, add oil and sauté onion, garlic, and peppers until vegetables are well-caramelized or golden brown.
2. Add tomatoes, stock, chili powder, cinnamon, cumin, paprika, cayenne, salt, pepper, and parsley.
3. Bring sauce to a simmer and cook for 10 minutes.
4. Using the back of a deep welled spoon, create evenly spaced divots in the sauce to place the eggs. Crack the eggs into a small ramekin and then carefully place each egg directly into each divot.
5. Cover pan and simmer for an additional 10-15 minutes or until egg whites are cooked and the yolks are soft.
6. Remove from heat and serve immediately.
