Stuffed Pumpkin


1 8-10 inch pumpkin
1 cup cranberries
½ cup dates
1/3 cup walnuts
1 cup tart apples, cored and chopped
¼ cup brown sugar
2 tsp. The Spice Hunter Pumpkin Pie Spice
1 Tbsp. orange rind, grated


Cut off the top of the pumpkin and save. Scoop out inside. Combine all ingredients and fill pumpkin. Bake without top for 45 minutes at 350°F. Place top on pumpkin and continue baking for 30 minutes. Serve warm.
