Twice Baked Potato Casserole


4 large potatoes
1 cup bacon bits
1 cup cheddar cheese
2 Tbsp. butter
½ cup sour cream
1/3 cup The Spice Hunter Fresh at Hand Onion Mix
½ cup half-and-half
¼ tsp. ground The Spice Hunter Fresh Twist Brazilian Sea Salt Grinder
¼ tsp. The Spice Hunter Fine Black Pepper


Preheat oven to 400°F. Pierce whole potatoes several times and bake for 1 hour. Allow potatoes to cool slightly and cut in half and scoop out into a large bowl. Mix in bacon, ½ cup cheddar cheese, butter, sour cream, Onion Mix, and half-and-half, salt and pepper. Move to an 8-inch square baking dish and sprinkle with the remaining cheese. Bake for 20-30 minutes until heated thoroughly; serve immediately.
