This recipe uses the following spices:

Chicken Dijonnaise

Ingredients:

2 Tbsp. oil
1 The Spice Hunter Mediterranean Bay Leaf
1 tsp. salt
1/8 tsp. The Spice Hunter Red Pepper (Cayenne)
1 chicken, cut up
1 cup dry white wine
½ cup chicken broth
3 egg yolks
2 Tbsp. Dijon-style mustard
1/3 cup sour cream
2 tsp. The Spice Hunter Fines Herbes

Preparation:

Brown chicken in oil. Put in skillet. Add all ingredients except last 4. Cover and simmer 45 minutes. Remove chicken and take meat off bones. Beat yolks and mustard together. Stir in 3 Tbsp. of chicken cooking juices. Blend. Return yolks to the rest of the liquid in skillet. Cook slowly until slightly thick. remove from heat. Blend in sour cream. Add chicken and Fines Herbes. Heat slowly to warm.
