This recipe uses the following spices:

Spicy Gumbo

Ingredients:

2 quarts water or stock
3 cups sliced carrots
1 (14 oz.) can diced tomatoes
2 The Spice Hunter Mediterranean Bay Leaves
1 Tbsp. salt
1 Tbsp. pepper
4 Tbsp. vegetable oil
3 cups onion, chopped
3-4 cloves garlic, chopped
2 cups celery with leaves, chopped
2 cups bell pepper, chopped
1-2 tsp. The Spice Hunter Red Pepper (Cayenne)
1 lb. chicken, chopped
1 lb. crab or shrimp
1½ tsp. The Spice Hunter Gumbo Filé

Preparation:

Bring water, carrots, tomatoes, bay leaf, salt and pepper to a boil in a large stockpot. In a sauté pan, heat oil and sauté onion, garlic, celery, bell pepper and red pepper until onions are clear. Add chicken and cook until browned. Pour contents of sauté pan into stockpot. Let simmer 30 minutes then add crab or shrimp and simmer 15 minutes. Stir in Gumbo Filé and serve over rice.
