This recipe uses the following spices:

Spicy Tropical Marinade


1 cup soy sauce
¼ cup apple cider vinegar
1 cup pineapple juice
½ cup dark brown sugar
1½ tsp. minced garlic
¼ tsp. salt
½ tsp. The Spice Hunter Coarse Black Pepper
½ tsp. The Spice Hunter Crushed Red Chile Pepper
4 lbs. chicken, pork, or beef


Mix ingredients together, pour all but 1 cup over meat, reserve for basting. Put meat in refrigerator to marinate from one hour to overnight. Turn meat occasionally to ensure even coating. Remove from refrigerator, pour off excess marinade. Bake, broil, or BBQ meat, basting occasionally with reserved fresh marinade.
