Holiday Spice Cookies
½ cup butter, softened
¾ cup sugar
¼ cup molasses
2 cups all purpose flour
½ tsp. salt
½ tsp. baking soda
½ tsp. baking powder
1 tsp. The Spice Hunter Highland Harvested Saigon Cinnamon
1 tsp. The Spice Hunter Ground Chinese Ginger
¼ tsp. The Spice Hunter Ground Madagascar Cloves
¼ tsp. The Spice Hunter East/West Indies Ground Nutmeg
Cream together butter and sugar in a large bowl and then stir in molasses and egg. In a separate bowl, combine flour with salt, baking soda, baking powder and spices. Add dry ingredients to the wet ingredients and stir until fully combined.
For rolled cookies, divide dough in half, form each half into a disk shape, wrap in wax paper and chill until firm. Once firm, roll out dough ¼” thick on a lightly floured surface, cut into desired shapes and place 2” apart on a lightly greased baking sheet. Bake at 350°F for about 10-12 minutes or until golden brown.
For sliced cookies, place dough on a sheet of wax paper, form into a 2” diameter log, roll up in wax paper and chill until firm. Once firm, remove from wax paper, slice log into ¼” thick cookies and bake as directed above.
